Years ago, I tried Rice Krispie treats, and the family and I loved them. I added the recipe to my book, but since then, I’ve added many more cereal treat recipes. It seems there is always a new version, such as Cocoa Krispie treats, peanut butter Rice Krispie Treats, candy corn treats, and many others. It’s getting to where I’ll need a recipe book just for the cereal bars! There is one more Rice Krispie treat recipe that I want to make, and add to my book, and you might want to try it, too. Butterfinger Rice Krispie treats combine delicious cereal bars with yummy candy bars – you can’t go wrong!
Butterfinger Krispie treats are made similar to regular Rice Krispie bars. As with some other Rice Krispie treat recipes, you can choose to use Rice Krispies or Cocoa Krispies in the Butterfinger version. Start out by buttering a square baking pan. Break 8, full-size Butterfinger candy bars into small chunks and set aside for now. Use a large saucepan and put in 1 tablespoon of butter and a quarter-cup of creamy peanut butter. Stir over medium heat until melted. Stir in 3-1/2 cups of mini marshmallows. Stir until melted.
Grease a wooden or other spoon and stir in 4 cups of Rice Krispies (or Cocoa Krispies). Continue stirring until the cereal is completely coated with the marshmallow/peanut butter mixture. Stir in the Butterfinger pieces but save a third of them to sprinkle on the top of the finished Rice Krispie treats.
When everything is mixed up well use a buttered spatula to press the cereal into the greased pan. When the mixture is cooled, spread chocolate frosting over the top of it, and then sprinkle the Butterfinger pieces all over it.
Let the frosting set up for an hour or so; it makes it a little easier to cut the Butterfinger bars without a mess. Cut the bars into generous squares and let the family gobble them up. Butterfinger Rice Krispie treat bars also make great gifts. Give the treats – including the pan – as a gift to someone on a holiday. Or, cut the treats into squares and then wrap each one in cellophane. The single treats can be put into stockings, or Easter baskets, or can be given out as party favors for a birthday or other special occasion. No matter how you serve or give them, the treats will put some smiles on faces, and that’s before they realize just how fabulous the Butterfinger Rice Krispie treats really are.
