Corn is one of my favorite foods; it’s a vegetable but it has a sweet taste which gives it a variety of different ways it can be cooked. In some countries it is can even be made into desert. Here are 6 absolutely irresistible ways to cook fresh corn.
1. Make corn pancakes
If you really want to shake things up at breakfast, serve corn cakes hot from the griddle and drizzled with maple syrup or honey. Or add herbs, shrimp or other scrumptious items for a quick fix dinner.
2. Fry Fritters
Fritters make a great side dish or goody. Stir fresh corn kernels in with a batter and lower it into hot oil until puffed and its a golden brown color. Yum!
3. In soup
Most Americans give up hot drinks for a while in the summertime, but fresh corn soup is worth making an exception for, or saving for a cool late-season evening. For a heartier bowlful, add poblano chillies, or trays creamy corn chowder packed with potatoes, you can make a vegetarian version, or add bacon. Another great soup is Sweet Corn Soup with Crab Corncobs simmered with chicken broth give this creamy, lump crabmeat soup, a superb depth of flavor.
4. Don’t forget dessert.
Considering it’s natural sweet taste, it’s surprising that corn is used in more desserts. Brazilians have the right concept though, simmering it in coconut milk and cinnamon to make corn pudding. A recipe at Taste of Home transforms fresh corn into dessert crepes topped with lemon cream and apricot jam. But the perfect summertime treat might be sweet corn ice cream.
5. Roasted in a salad
Roasted Corn, black Beans, and mango salad. Roast corn kernels in a skillet with beans and mango pieces, for a sweet and nutty flavor that complements the fresh cilantro and tart mango. Serve as a side or spoon over greens for a salad.
6. Confetti Corn
A very popular side dish that can be paired with pretty much any main course.
Fry chopped bacon in a large skillet until crisp; take out bacon, and drain on paper towels, saving 2 tablespoons drippings in skillet. Set bacon aside.
Sauté corn, onion, and bell peppers in hot drippings in skillet over medium-high heat 6 minutes or until tender. Add cream cheese and half-and-half, mixing until cream cheese is melted. Mix in sugar, salt, and pepper. Top along with bacon.
