Eyeball Cupcakes

What you’ll need:
Cupcakes of choice
White frosting
Colored frosting (your choice)
Lifesavers candy
Chocolate chips
Black gel frosting

Waited until the last minute to make the desserts for your Halloween celebration? You have to or they won’t be fresh. Luckily for you, it doesn’t take a lot of time or effort to make cake, brownies, cookies, or cupcakes. What makes those ordinary desserts look more like Halloween desserts is how you decorate them, of course. Some cupcake designs expect you to be an artist, drawing with this, spraying with that, mixing and rolling out some sort of dough frosting. But you can make quick Halloween cupcakes with a spooky theme – yet still kinda cute – when you turn cupcakes into eyeballs.

Eyeballs are so easy to make because cupcakes already have shapes that are similar to eyes. Although you can actually use any color/flavor of cake mix for the eyeballs, some that go along well with a Halloween theme include red velvet, chocolate, green-tinted, or white. If you want to choose a cake mix with nuts, fruit bits, or other goodies, it can create an even creepier look to the eyeball when the guest bites into it.

Mix up the cupcakes and bake according to package or recipe instructions. Remove from the oven and allow to cool completely. After that, frost each cupcake with white frosting; it will represent the white of the eye. Then, decide on the manner in which you will create the rest of the eye.

If you want the cupcake to have eye shadow, use frosting of blue, green, purple, or another color, and spread it at the top and the bottom, forming an oval shape as you do. It can be easier to spread it if you freeze the cupcakes until the white frosting is stiff. Remove from the freezer and then spread the eye shadow frosting.

One way to make the pupil and iris of the eye is to freeze the frosted cupcakes and then draw them on with an edible marker. Let the cakes thaw and you’re ready for the party. The cakes don’t have to be frozen solid; the frosting just has to be stiff.

My favorite way of making the iris and pupil is to use a Lifesaver candy as the iris and an upside-down chocolate chip as the pupil. Stick them in the center of the cupcake. Instead of a Lifesaver and a chocolate chip you can use any small, doughnut-shaped candy, and a tiny round candy.

Make eyelashes by using black tube gel. Draw lines above the eye, and shorter ones below it, to finish the look of the eye. Set the cupcakes out and watch everyone grab them. Your party will be remembered for years; no one ever forgets eating an eyeball!
