Shortly after I made a life commitment to the raw vegan diet, I became aware that there are certain vitamins and minerals that individuals following the lifestyle often do not consume in adequate amounts. According to the information I was exposed to, raw vegans often do not attain sufficient quantities of omega 3. During my reading about this and other data regarding healthy eating, I came across an article stating that cauliflower contains a bit of omega 3. This was very surprising to me given that the only foods I’d heard about possessing omega 3 were fish like salmon and nuts such as walnuts and cashews. Once I learned that cauliflower also has omega 3, I became curious about what other beneficial properties it might contain. Here are three:
1. Vitamin C.
In discussing all of the great health benefits of cauliflower, WHFoods notes that 1 cup of raw cauliflower contains 85.9% of the daily recommended allowance for vitamin C. This fact is critically important as a result of all of the wonderful things that vitamin C does for the body. For example, vitamin C protects against cardiovascular disease, immune system deficiencies, eye disease, and skin wrinkling. Additionally, vitamin C protects against prenatal health problems. In commenting on the importance of vitamin C, MD Mark Moyad states that “Vitamin C has received a great deal of attention, and with good reason. Higher blood levels of vitamin C may be the ideal nutrition marker for overall health.”
One cup of raw cauliflower contains 11.1% of the DV for choline. Although choline is a chemical the body can produce, it is widely believed that we should still attain choline from our diet. In discussing the benefits of choline, Laura Dolson notes that it protects our livers from fat accumulation and may help decrease the homocysteine and cholesterol levels that are associated with cardiovascular disease. Additionally, choline may protect against certain cancers.
Just one cup of uncooked cauliflower contains 15.2% of the DV for folate. This is great since the vitamin has a plethora of healthy benefits. In discussing the health benefits of folate, Jennifer Brett notes that the vitamin helps fight heart disease and releases serotonin. Additionally, folate plays a key role in the production of red blood cells and contributes to proper brain functioning.
Although I have been enjoying a plethora of great fruits and vegetables since becoming a raw vegan, my awareness of all the benefits that result from eating cauliflower means that I’ll definitely be putting them on my grocery list this week. What about you?
