When the skin of an avocado is removed, it does not take long for the inside to begin turning gray. To prevent discoloration, cut the halves with a sharp knife. Immediately after removing the pit, coat the exposed flesh with freshly squeezed lemon juice. Although lemon juice is tart, it will not adversely affect the flavor or texture. Use just enough to keep the exposed halves from becoming dark and unappetizing.

One of the tastiest fillings for stuffed avocado halves is seafood salad. Buy or prepare your favorite recipe, and use it to fill the neatly cut halves. Enhance it further with fully-cooked medium-size shrimp. The tops can be beautifully garnished with a few sliced black or green olives. Combine Tuna Salad with Chopped Walnuts and Diced Apples
Ordinary tuna salad is one of the tastiest fillings for avocado halves, but it can be better than ever with a couple of simple additions. As the photo shows, it can also contain chopped walnuts and diced apples. Choose slightly tart granny smith apples that will be kept in check by the mayo. The chopped walnuts add amazing texture and even more flavor. Garnish each of the avocado fillings with a single walnut half, and add more color with a small tomato wedge.
Mix Wild Rice with Beans and Tex-Mex Seasoning
Avocado fillings do not have to be cold. On the contrary, some of the most delicious options are steaming hot. Combine cooked wild rice with drained black or red beans and a favorite Tex-Mex seasoning. Taco or fajita seasoning can also be used to add tremendous flavor. Add it a teaspoon at a time to achieve the perfect intensity. If desired, stir in finely chopped sweet red or green bell peppers while the rice and beans are cooking.
